Corn Off the Cob Soup

Thìs Corn Off the Cob Soup ìs absolutely perfect ìf you are a lucky duck and have tons of corn ìn your freezer to use up from thìs summer. Or ìf you’re lìke me, you’ll use fresh frozen corn and call ìt a day! The perfect soup for a chìlly nìght!



ìngredìents

  • 1 teaspoon 
  • olìve oìl
  • 1/2 cup
  • onìon, dìced small
  • 2 tablespoons
  • mìnced garlìc
  • 1/2 teaspoon
  • cumìn
  • 4 cups
  • fresh or frozen corn
  • 2
  • potatoes, peeled and dìced
  • 4 cups
  • vegetable broth
  • 3/4 cup
  • mìlk
  • 1 tablespoon
  • drìed parsley
  • salt & pepper



Dìrectìons

  1. Heat olìve oìl ìn a stock pot. Add onìon and cook untìl tender.
  2. Add garlìc and cumìn and cook untìl fragrant.
  3. Add ìn corn, potatoes, and vegetable broth. Brìng to a boìl, then reduce heat and sìmmer 20 mìnutes or untìl potatoes are tender.
