Avocado toast is one of my go-to easy breakfasts that is full of flavor and healthy, filling fats, and it happens to be totally plant based vegan.
Ingredients
- 1/2 ripe avocado
- 2 slices whole grain toast (or toast of your choice)
- 2/3 cup halved baby heirloom tomatoes
- pink Himalayan salt, to taste (or salt of choice)
Instructions
- Add avocado slices to each piece of toast, and use a fork to mash up so it is spreadable.
- Add tomatoes on top.
